Recipe: Chocolate Buttermilk Muffins

I haven’t baked in a minute, and was craving something chocolatey to have with my coffee in the mornings, so I thought I’d try a recipe of the famous Costco chocolate muffins. Those were insanely easy, and so delicious. Do let me know if you try making them.

For the Cake:
1/3 cup vegetable oil
1/2 cup sugar
1/4 cup brown sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup cocoa powder (sifted)
1 cup buttermilk
2 cups all-purpose flour
1 cup chocolate chips

1. Preheat oven to 350F.
2.Prepare a muffin pan with paper liners.
3. Combine vegetable oil with sugar, brown sugar, eggs, and vanilla.
4. Add salt, baking soda, baking powder, cocoa powders and mix well.
5. Add buttermilk and flour, and mix just until combined. Fold in chocolate chips.
6. Fill muffin cups about 2/3 full. Bake for 18-20 minutes.
