RECIPE: Tuscan Fries

I’ve been having late nights during the quarantine. It was too late to order dinner, so wanted a little snack to have with my last episode of You Season 2 (can’t wait for season 3). I wanted something easy, and satisfying. This was so simple to make, and was so good. Let me know if you end up trying it.

WHAT YOU NEED:

-1-2 russet potatoes, cut into matchsticks (I only used 1, but I was having this alone and didn’t want to store any leftovers)
-3 tbsp extra virgin olive oil
-1 tbsp thyme
-4/5 cloves garlic, skin on and smashed or chopped garlic
-table salt and sea salt
-1/2 teaspoon paprika
-2 tbsp grated parmesan cheese
-1 tbsp salted butter

THE STEPS:

1. Preheat the oven to 220 degrees C

2. Place the potatoes on a large baking sheet and toss with thyme, olive oil, paprika, the garlic cloves, + a pinch of salt. Spread the fries in an even layer and then bake in the oven for 15-20 then flip and bake for 15 minutes more.

3. Add the grated parmesan and butter, toss and return to the oven for another 5-10 minutes – till they’re nice and crispy.
